MANILA, Philippines—George Yang’s life, for years bound to the fast-food franchise that he brought to the Philippines, is now measured in musical terms, down to daily details.

He has decided that his senior years will not be played out in pianissimos. Not after he found a whole new world that hums in head tones and vibratos, a parallel universe of lush orchestrations and rich arias — not just to listen to, by the way, but to sing; not just to himself, in fact, but before paying audiences.
